The secret to perfectly smoked meat lies not only in technique but also in seasoning. A good rub, that blend of spices that forms a flavorful bark, is the signature of your barbecue.
The Basics of a Balanced Rub
A classic rub consists of three elements: salty, sweet, and spices. The balance is crucial so as not to mask the taste of the meat.
- The Salty : Fine or coarse sea salt. It penetrates the meat and enhances the flavors.
- The Sweet : Brown sugar or cane sugar. It caramelizes with heat for a divine bark.
- The Spices : Smoked paprika, ancho chili powder, garlic powder, cumin. The soul of the blend.
Our Signature "Fuego Lento" Recipe
After years of testing, here is our favorite blend for pork. Carefully mix all the ingredients in a bowl and store in an airtight jar.
For about 1 cup of rub:
- 1/4 cup brown sugar
- 1/4 cup smoked paprika
- 2 tablespoons fine sea salt
- 1 tablespoon ancho chili powder
- 1 tablespoon granulated garlic
- 1 teaspoon ground cumin
- 1 teaspoon ground black pepper
Apply the rub generously to the dry meat at least one hour before cooking, or even the day before for maximum flavor penetration. Let the magic of the smoker do the rest.
